VEGAN HAYSTACKS



INGREDIENTS


  • ½ onions

  • 8 oz can Black or Red Bean

  • 2-3 tomatoes

  • 1 Head lettuce - chopped or shredded

  • 1 Red bell peppers

  • 1-2 Cucumbers

  • ½ Cup sliced olives

  • 1. Avocado

  • Soak beans overnight, rinse and cook until soft

DIRECTIONS


  1. Put a layer of chips on a plate. If they are larger tortilla chips, crush them a bit.

  2. Spoon beans over the top of the chips, distributing them in lovely lumps

  3. Sprinkle vegan Cashew cheese over the beans so it melts or ladle on the vegan cheese

  4. Be generous with the lettuce

  5. Now sprinkle generously or sparsely the other ingredients

  6. Make some Guacamole with Avocado and add to Haystack
