Vegan Cranberry/ Almond SOFT Cookies



INGREDIENTS


  • ¾ cup vegan butter, softened

  • ¾ cup organic Maple sugar/syrup

  • 1 cup almond milk, or any non-dairy milk

  • ½ cup Raisons

  • 1 teaspoon almond extract

  • 2 cups Spelt flour

  • 1 teaspoon baking powder

  • ½ cup Craisins

Instructions


  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

  2. Using a stand mixer or a hand mixer, cream the butter and the sugar together.

  3. Add the milk, cornstarch and the almond extract and mix for 1 - 2 minutes.

  4. Add the flour, baking powder and salt and mix until well combined. The dough will be stiff.

  5. Stir in the craisins.

  6. Drop heaping tablespoons of dough onto the baking sheet.

  7. Bake in the preheated oven for 12 minutes.

  8. Let cookies rest on the cookie sheet for 3 min. Remove to wire rack to cook completely
