Black Bean Rice Loaf



INGREDIENTS


2.0 cup Beans, black

1/2. cup, chopped Onions, raw

1/2 cup, grated Carrots, raw

1.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips

3.0 cup Brown Rice, medium grain

1.25 cup Quaker Oats - Quick 1 Minute - Dry

3 tbsp Caribbean spice mix with roasted garlic or seasoning blend of your choice.

DIRECTIONS


  1. If using canned black beans, reserve liquid. I prefer cooking from dry and using that liquid. Puree or mash most of the beans using bean liquid to help in a blender.

  2. Combine all ingredients and mix well.

  3. Makes 5 loaves. Bake in 400-degree oven for 40 minutes.


Serving Size: Makes 12 servings.
